I used Alton Brown's basic muffin recipe from his baking cookbook that just calls for "1-2 cups of extras". Here's what that looks like:
Dry Goods
11oz (~2.25 cups) all-purpose flour
2 tsp baking powder
1 tsp baking soda
pinch of salt
Wet Works
.5 cup sugar
.5 cup vegetable oil
1 large egg
1 large egg yolk
1 cup plain yogurt
Sift dry goods together in one bowl. Whisk wet works together in another. I prefer to add the extras (berries, nuts, chocolate, etc.) to the dry goods first then add the wet to the dry and stir with a spatula until it just comes together (will be lumpy and might be some spots of flour that don't look incorporated). Then spoon into muffin tins. Makes 12 regular sized muffins.
I used a little less than a cup of shaved dark chocolate (because that's what we had) and maybe a bit less than 2 cups of raspberries (because, again, that's what we had from the brambles in the yard that really needed to be used). You could reduce berries to one cup and still have a fine muffin. In fact, they might hold together better than mine. He recommends not using more than a cup of chocolate chips. It's a beautiful balance of tart and sweet.
